Mexican flare.

Hello, readers.
Last week, mal-ster and i decided we wanted to have a little fun trying out some new recipes. 
one of the ones we tried was our twist on empanadas.
this summer on vacation, we ate at this fabulous little tapas restaurant and had some of the best empanadas i've ever had. they were steak with green apple, and they were so good.
so, we made our own.

The ingredient list is as followed:
  • one green apple
  • one box of pie crusts
  • one pack of chicken tenderloins
  • one pack of ranch seasoning
  • sour cream
  • cream cheese
  • whipping cream
  • cheese


making them is actually quite simple...seriously. 
cook the chicken and then shred it.
cut up the apple into bite size pieces
make the ranch sauce (we really just eyed this, it's about half the ranch seasoning pack, a bit of cream cheese, some sour cream, and some whipping cream. you want the sauce to have a fairly thick consistency, but make sure not to use too much of the ranch seasoning, you don't want it to overpower all the other flavors.)





assembling them was the fun part. cut circles from the pie crust (you can use a cup or bowl for this) and scoop a generous amount of the ranch sauce on the circle, add chicken, apple and cheese, then fold over and seal the edges with the end of a fork. bake at 400 degrees for about 15 minutes or until the pie crust is a light golden brown.


you can serve them with a simple garnish, like we did, or you can drizzle some of the leftover ranch sauce on top.

the mix of flavors in these empanadas may seem strange, but they mix so well. the apple gets perfectly cooked, the ranch enhances all the flavors. and the baked pie crusts give mal.lys's empanadas a new twist. try it out, let us know what you think.
